Ceylon Cinnamon

Recipe - Cinnamon rolls

 

Ingredients:

Dough - 1 Tbsp Oats flour, ½ tsp baking powder, ⅛ tsp salt, 1 tbsp melted coconut oil or butter, half mashed banana

Filling - 2 pitted dates, ½ tsp Snowpeak Ceylon Cinnamon Icing - chocolate, whipped cream or vanilla Greek yoghurt

 

Step1 - Combine the oat flour, baking powder and salt in a small mixing dish. Combine the coconut oil and mashed bananas in a mixing bowl. Stir until a dough-like consistency is achieved. Form a ball out of the dough. Set aside for some time.

Step 2 - Cut pitted dates into pieces and mix them into a paste with the back of a fork for the filling. Add the Snowpeak Ceylon Cinnamon and mash together until the cinnamon is well absorbed into the dates paste. Roll out the dough ball into a long rectangle on a level surface dusted with flour. By slicing off the uneven edges with a knife, make the rectangle's sides straight. Continue rolling the dough into an even longer tube by pressing the dough you cut off back into the rolled-out dough.

Step 3 - Cover the rolled-out dough with the cinnamon-date paste. Fold the dough in half, lengthwise. To make a cinnamon roll, wrap up the folded-over dough into a pinwheel.

Step 4 - In a large, oiled microwave-safe cup, place the folded-up cinnamon roll. Microwave for 1-2 minutes.

Step 5 - Serve hot with drizzled cinnamon, honey, chocolate or any of your desired icing.
